It’s Never Too Late for Brunch

Tuna Salad or Chicken Salad Sandwiches make an excellent healthy brunch when you want to keep it simple and light!
2 -4 servings 350 calories Prep time 15

Ingredients
Whole Wheat Bread or Buns 2 6-ounce cans White Meat Tuna or Chicken packed in water, drained 2 Green Onions, chopped 1 Stalk Celery, finely chopped
1/3 cup prepared Mayonnaise
1 Tbsp. Whole-grain Mustard
Freshly ground Black Pepper Fresh Spinach
1 Tomato
Dash of Basil
1 Tbsp. Dill Relish In a small mixing bowl break up the tuna with a fork. Mix in the celery, onion, relish and basil. Add the mayonnaise, mustard and season with pepper, to taste and mix. Toast the bread and line bottom slice with spinach and a slice of tomato. Add the tuna salad mix and top bun, cut in half and share with a friend or kick back with some Netflix!
If you decide that you want a chicken salad sandwich instead of a tuna salad sandwich, make it the exact same way except use canned chicken instead of canned tuna.
