Cajun Chicken Pasta Alfredo w/ Mushrooms & Asparagus

The best thing about pastas is there is always enough for at least 2-4 separate meals! So, whether you want to share with a friend of just have leftovers for the rest of the week, you can’t go wrong.

Start by adding more than half box of pasta to Microwave safe bowl filled ¾ with salt water. Microwave 15 – 20 minutes then drain water into a plastic cup. Put pasta in a to-go box and set in fridge to firm up. Add alfredo sauce, ½ bottle basil aioli, garlic, basil & Cajun seasoning in same bowl and microwave for 7-10 minutes.
While waiting for the sauce, prepare your mushrooms, asparagus and chicken. Set a paper towel on paper plate and add water to dampen towel. Add mushrooms and asparagus and cover with another paper towel. Dampen again with water (this is the secret to steaming vegetables in the microwave.) On a separate paper plate, place sliced chicken and brush Cajun marinade heavily. Set that plate on the vegetable plate and microwave 7-10 minutes.
Take pasta out of fridge and place some on your plate. Drizzle with sauce. Add vegetables and chicken and drizzle with sauce again. Put the rest in your to-go box for another day and kick back and excite your taste buds!
