Caribbean Mango Shrimp Tacos and/or a Caribbean Mango Shrimp Salad

An easy seafood delight for a hot summer day. Be it tacos, a salad or just a light snack of chips Mango Salsa, you can't go wrong and it won't hurt your budget!


Caribbean Shrimp Tacos 1/2 lb. Medium Shrimp ¼ cup Caribbean Mango Sauce 1 Tbsp. Garlic Salt Sea Salt & Pepper (to taste) 1 Tbsp. of Basil ½ Lime Mango Salsa: 2-4 Whole Grain soft Tortillas ¼ cup diced Tomato ¼ cup diced Green Peppers Fresh Baby Spinach ¼ cup Mango Chunks ¼ cup diced Red Onion 2-4 servings 100 - 200 calories Prep time 15

Put shrimp in a medium bowl and add Mango sauce, garlic, basil, salt & pepper and mix. Let sit for 15 minutes in fridge. Mix the mango salsa in a small bowl. Put a piece of tinfoil on an electric griddle or use a small fying pan on medium heat, add 1 ounce of EVOO or cooking spray, add shrimp and cook for about 4-6 minutes. On tortillas, add salsa mix, then shrimp and top with spinach. Squeeze a tad of lime juice over the shrimp and wrap your tortillas and BAM, your tacos are ready for the taking!





Caribbean Mango Shrimp Salad

Fresh Baby Spinach ½ lb. Medium Shrimp ½ cup cubed Tomato 1 slice of Red Onion ½ cup Mango Chunks Caribbean Mango Dressing 1 servings 150 calories Prep time 10


Put a piece of tinfoil on an electric griddle or use a small frying pan on medium heat, add 1 ounce of EVOO or cooking spray, add shrimp and cook for about 4-6 minutes. In any size bowl you like, add a handful or two of spinach, tomatoes, red onions, mango chunks, and shrimp. Add whatever amount of dressing you like and mix all together. Simple, fun & healthy! These two meals can be made together or into two complete separate meals, depending on how big you make each portion or just what you happen to be in the mood for that day.


Caribbean Mango Salsa w/ Chips And since we will have some salsa left over, that makes for a perfect snack, whether it’s your choice for breakfast, a break between classes or a midnight kitchen raid! Grab your favorite chips and enjoy
